Looking for a modern take on Hanukkah, we asked Aarons to update the holiday’s iconic dishes for a festive cocktail party. His inventive menu marries tradition with his devotion to seasonal ingredients and global flavors. Classic latkes are reinvented with the addition of Jerusalem artichokes and a Greek-inspired taramasalata garnish; chicken livers are paired with cherries in a nod to Aarons’ tenure at Zuni CafĂ©; and brisket is infused with chiles—Mexican flavors are ingrained in his culinary consciousness, says Aarons, who grew up in Los Angeles.
